I thought I would share with you all some pictures of some of my fave meals from the past few years.
This is beef stew and judging by the pattern on the dishes, I made this at my folks house so this one is completely onion and garlic free (my dad, unfortunately, can't eat onion, garlic, shallots, chives, etc. It makes me very sad because I LOOOOOVE garlic and, more recently, shallots).
I made this when I was first married: Mexican Black Bean Soup. I even fried the tortillas and tried to make it really pretty for the picture. This is a good one for a cold, rainy day
This is Raspberry Cheesecake with a red wine reduction and chocolate crust. I created this for a recipe contest that required you to use one of their salad dressings. I used 2 tablespoons of their raspberry vinaigrette in the reduction. I ended not entering the contest after all because I couldn't get my recipe to upload.
Potato Chowder. A warm hug on a cold day. 'Nuff said.
Spicy Sweet Potato Lasagne. I made a spicy sweet potato soup (all pureed so it was smooth). My husband (who loves pasta but especially lasange) thought it would make a nice alternative to a tomato based pasta sauce. I made this like classic lasagne but used the soup instead of tomato sauce and ground chicken rather than ground beef. It was delish but waaaay more filling than regular lasagne because of the sweet potatoes
Asian noodle salad. This was an attempt to make lettuce wraps, but I didn't buy the right kind of lettuce and it didn't wrap very well. I got frustrated and just shredded the lettuce in with everything. And it totally turned out!
Stir fry. I have made several variations of this dish over the years, and they are never the same twice. I always use rice vermicelli because neither my husband nor I are huge rice fans
Home made Sweet and Salty Peanut Butter Granola Bars with chocolate. Lots of work, but yummy. Haven't made these in a while. Maybe I should....
Pie at Christmas! I love pie and I love making pie. the one on the left is double chocolate peppermint cream pie (with peppermint candy on top) and the one on the right is Apple Galette with a shortbread crust
The Day After Thanksgiving Pie. I conceived this as a savoury pie that would use all the leftovers from a turkey dinner. Stuffing crust, filing made with leftover turkey, carrots, onions and gravy with mashed potatoes on top.
This one was not actually made with leftovers (I used ground turkey and made a chicken gravy style sauce) but the idea is to use leftovers.
Home made Pita bread. I wanted some sort of bread product one day when I was making soup but I had no milk and did not want to take the bus to the grocery store just for milk. I found this recipe for pita that used no milk. It was a lot of work (you have to let the dough rise about 4 times) but rewarding. The bread only take about 5 minutes in a 500 degree oven and you can literally watch the bread puff up and make the pocket inside.
Pie at Thanksgiving Pumpkin pie (thanks for the recipe mom!) and chocolate pecan pie (which tastes like a gooey brownie with pecans wrapped in pastry). I knew there was a reason to like autumn!
My first attempt at making sausage rolls. Hadn't quite figured out the meat to puff pastry ratio yet. I just used the sausage meat you can buy that is not in casings.I made spicy chicken sausage rolls next and the ratio was much better.
Quick chicken and Sausage Jambalaya. One of the few times I cook rice (the other is for chili). I use kielbasa style turkey sausage (Capital brand is best).
Strawberry Swirl Cupcakes. I used my Grammie's "Good Cupcakes" recipe, filled with a strawberry filling and then more strawberry filling swirled on the top. I served them with a strawberry glaze but they looked so pretty before the icing that I had to take a picture
Chicken Enchilada Lasagne. This was my attempt to combine my husband's love of lasagne with his love of chicken enchiladas. Did it work? You sure bet it did!
Chicken, Tomato and Spinach Tarts. I didn't make the pastry, but frozen Tenderflake shells work just fine. These are so easy: Diced, cooked chicken breast, stewed tomatoes (the small cut ones, drained), spinach, monterey jack cheese. Bake until golden and melty.
This is the first iteration of a new favourite - Orzotto (orzo pasta cooked like risotto). This is the parmesan and parsley variety served with chicken and fried tomatoes. Further iterations are creamier and some ingredients have changed, but the process is the same. It requires some patience as the orzotto requires frequent stirring so it doesn't stick to the pan and/or burn, but worth it.
I hope you've enjoyed looking at the pictures and maybe it will inspire some ideas for dinner. You'll have to wait till my cookbook comes out for the recipes though!
